Recipes For Thanksgiving

Food is the center of attention at Thanksgiving.  The Pilgrims worked hard to make the new world their home, and this was their celebration.  The menu is usually the same.  The table is jammed with turkey, stuffing and all the trimmings.  Families gather not only to celebrate the historic event, but just to catch up with everyone’s lives.  The food may be similar, but Thanksgiving dinner recipes have as much variety as the colors of the leaves on the November trees.

Doesn’t this appetizer sound delicious?  Move the pumpkin from dessert to the start of the meal as a savory Pumpkin soup.  Butter and oil simmer over a medium heat. Add three sliced leeks (only the white) and saute until the leeks are soft. Now throw in some pumpkin puree along with cloves, cinnamon, ground ginger and some salt.  Now stir in some vegetable broth. Add brown sugar.  Use low heat to simmer it for 10 minutes. If desired pour a tsp or so of cream or half and half into the bowl before adding soup and a dash of cinnamon.  That soup is a real treat.

A turkey can be fried instead of broiled.  Don’t worry, fried turkey isn’t greasy.  The oil is so hot it sears the skin, thus the oil can’t penetrate it.  Buy a turkey fryer.  A meat thermometer is also needed, along with a deep fry thermometer to check the oil for the correct temperature.  Make sure to fry outside in a clear area.  The oil must be between 325F and 350F.  It’s finished cooking when the breast measures at 170F, which will take about three minutes per pound.  Dressing isn’t fried inside the turkey, but spices can be injected into it.

For some other soup ideas try curried pumpkin apple soup, butternut squash soup, or pumpkin and sausage soup.  But there are other good appetizers for the meal.  Cheese wrapped asparagus is delicious.  This calls for both a sliced cheese and a soft cheese spread.  One idea is swiss cheese slices with a softer blue cheese spread.  Wrap the asparagus with the slices spread with the soft cheese, then bake until tender at 230C.  Ok, this way asparagus isn’t healthy.  Thanksgiving is a time for a little fun.  So live it up.
