what kind of ethnic cooking is the hardest to find all the right ingredients?

Oriental cooking, Middle Eastern/South Asian cooking, Meditteranean, European, or hispanic cooking.
If you ask what I think. Oriental would have to be the hardest, since they have so many unique vegetables, and use lots of fermented flavorings.

    If you live in a small town in Mid-America then probably everything but mexican would be rare in supermarkets. If you live in LA, Chicago or NYC then we can get pretty much anything.

    And, with mailorder even that problem is solved.

    I would have to say Indian! Indian food has alot of spices and ingredients that are not easy to find even in India! If you live in South India, it is difficult to get some North Indian ingredients and vice versa. Here in the US, there are many hard to find ingredients available only in India.

    I agree with Blue Orchid totally, Indian ingredients are hard to find and even harder to substitute!

    thai. they use so many different spices, i can’t even identify what they are.
